Although I love rich chocolate desserts the most, sometimes I just want a light healthier sweet ending to my meal. In fact, I am more likely to eat fruit in a dessert form than fresh. When pineapple is in season, I like to make pineapple targets that are simple to make, naturally sweet and totally a healthy dessert. You can change them up and use different kinds of nuts and spices. You can also use other fruit!
Pineapple targets
Although I love rich chocolate desserts the most, sometimes I just want a light healthier sweet ending to my meal. In fact, I am more likely to eat fruit in a dessert form than fresh. When pineapple is in season, I like to make pineapple targets that are simple to make, naturally sweet and totally a healthy dessert.
Ingredients
- 4 slices of pineapple
- Butter for greasing the baking dish
- 2 tbsp rum
- 2 egg whites
- 2 tbsp sugar
- 2 tbsp sweet cocoa or hot chocolate powder
- Cashews roughly chopped
Instructions
- Lay slices of pineapple in a buttered baking dish a drizzle with rum.
- Whip the egg whites, adding the sugar and then cocoa.
- Spoon the egg white “snow” on each pineapple slice, sprinkle with cashews and brown under a broiler.
- Serve warm.
