I wanted to make fish for dinner. I also wanted cheese. And of course there has to be a vegetable. I found dover sole fillet in the freezer and broccoli and brie cheese in the fridge. They came together very well and and very fast.
Ingredients:
4 fillets of any fish
1/2 broccoli, cut into florets and steamed (or 1/2 bag of frozen broccoli)
1 round or wedge of brie cheese, sliced
Salt
White pepper
4 tbsp flour
1 tbsp oil
3 tbsp butter
Directions:
- Season the fish with salt and pepper. Drench it in flour.
- Heat the oil and one tablespoon of butter in a pan and fry the fish, about two minutes each side.
- Butter a baking or casserole dish. Put the fish in it, top it with the broccoli florets and cheese. Dot with the remaining butter.
- Bake until the cheese melts.
- Serve with a lemon wedge and mashed potatoes if desired.
