One of the meatless dishes I grew up on is cauliflower with eggs. This vegetable has always been popular in Czech cuisine, either scrambled with eggs or fried. We would normally have it for lunch but it would make a great healthy breakfast.
Ingredients:
1 onion, chopped
1 tbsp butter
1/2 head cauliflower
4 eggs
Salt
Pepper
Directions:
- In a small pot over medium heat, melt the butter and sweat the onion for a minute.
- Add the cauliflower, salt and pepper and cook slowly until the cauliflower is soft. Add water if needed.
- Once the cauliflower is cooked, crack the eggs in and mix with a wooden spoon into a scramble.
- Serve with boiled buttered potatoes or bread.
