Fish in Walnut Crust

This recipe is adapted from a Czech cookbook that my father gave me for Christmas. I very much like the crunchy, cheesy crust on the fish. You can use any kind of white fish, such as cod. 

Ingredients:

4 fish fillets 

Salt

White pepper

Flour for drenching

Herbs, fresh or dried (parsley, chives, thyme, sage,…), finely chopped

2 tbsp oil

2 eggs

1/2 c cheese (such as cheddar or gruyère), grated

3/4 c walnuts, roughly chopped

Butter

2 tbsp breadcrumbs

Lemon slices for garnish

Directions:

  1. Season fish with salt and pepper and drench in flour mixed with herbs.
  2. Heat oil in a skillet over medium heat and brown the fish on both sides.
  3. Whisk the eggs with cheese and walnuts and season with salt. 
  4. Place the fish in a buttered casserole dish and cover with the cheese mixture. Sprinkle with breadcrumbs and dot with butter. 
  5. Bake in the oven at 350ºF or under the broiler until golden brown. Keep an eye on the broiler if using as it will be done very fast. 
  6. Garnish with lemon slices. Serve with boiled or mashed potatoes and steamed vegetables.
