This recipe is adapted from a Czech cookbook that my father gave me for Christmas. I very much like the crunchy, cheesy crust on the fish. You can use any kind of white fish, such as cod.
Ingredients:
4 fish fillets
Salt
White pepper
Flour for drenching
Herbs, fresh or dried (parsley, chives, thyme, sage,…), finely chopped
2 tbsp oil
2 eggs
1/2 c cheese (such as cheddar or gruyère), grated
3/4 c walnuts, roughly chopped
Butter
2 tbsp breadcrumbs
Lemon slices for garnish
Directions:
- Season fish with salt and pepper and drench in flour mixed with herbs.
- Heat oil in a skillet over medium heat and brown the fish on both sides.
- Whisk the eggs with cheese and walnuts and season with salt.
- Place the fish in a buttered casserole dish and cover with the cheese mixture. Sprinkle with breadcrumbs and dot with butter.
- Bake in the oven at 350ºF or under the broiler until golden brown. Keep an eye on the broiler if using as it will be done very fast.
- Garnish with lemon slices. Serve with boiled or mashed potatoes and steamed vegetables.
