Meatloaf Schnitzel

I wasn’t sure what to name this dish as there is no English translation of the Czech word “Karbanátek”. It is essentially a meatloaf mixture, breaded and fried like a schnitzel so I named it as such. 

Ingredients:

1 lb ground meat (preferably beef and pork)

2 eggs

1 roll or bun (can be one day old)

Milk

1 onion, finely chopped

2 cloves of garlic, pressed

Salt 

Pepper

Flour

Breadcrumbs

Oil for frying

Directions:

  1. Cut the roll into chunks, pour a little milk over it, and let it soak for a few minutes. 
  2. Mix the meat, one egg, and the roll (squeeze out any excess milk before putting it in). 
  3. Add onion, garlic, salt, and pepper (and some breadcrumbs if the mixture seems too wet).
  4. With wet hands, shape medium-size balls and flatten them into patties. Roll each of them in flour, the remaining egg with a bit of milk, and then breadcrumbs. 
  5. Fry the breaded patties in oil over medium high heat on both sides until golden brown and cooked through. 
  6. Serve with boiled or mashed potatoes and a pickle.
