I wasn’t sure what to name this dish as there is no English translation of the Czech word “Karbanátek”. It is essentially a meatloaf mixture, breaded and fried like a schnitzel so I named it as such.
Ingredients:
1 lb ground meat (preferably beef and pork)
2 eggs
1 roll or bun (can be one day old)
Milk
1 onion, finely chopped
2 cloves of garlic, pressed
Salt
Pepper
Flour
Breadcrumbs
Oil for frying
Directions:
- Cut the roll into chunks, pour a little milk over it, and let it soak for a few minutes.
- Mix the meat, one egg, and the roll (squeeze out any excess milk before putting it in).
- Add onion, garlic, salt, and pepper (and some breadcrumbs if the mixture seems too wet).
- With wet hands, shape medium-size balls and flatten them into patties. Roll each of them in flour, the remaining egg with a bit of milk, and then breadcrumbs.
- Fry the breaded patties in oil over medium high heat on both sides until golden brown and cooked through.
- Serve with boiled or mashed potatoes and a pickle.
