Stuffed peppers are similar to stuffed cabbage which is popular in many European countries. The main difference is that there is no rice in stuffed peppers. They are commonly cooked in tomato sauce and served with dumplings, pasta, or rice. I also like them just baked in the oven and served with boiled buttered potatoes.
Ingredients:
1 lb ground beef
1 egg
1 onion, finely chopped or grated
Salt
Pepper
4-6 long green peppers, such as Cubanelle
Oil
Directions:
- Preheat oven to 350 degrees.
- Mix the meat with the egg and onion. Season with salt and pepper.
- Cut the stem off of the peppers and take the seeds out carefully so the peppers stay whole.
- Stuff the peppers with meat mixture. If you have meat left over, make large meatballs out of it.
- Place peppers in a greased baking dish and bake for about 45 minutes.
- Serve with boiled potatoes.
- If you want to try stuffed peppers in tomato sauce, you can cook them in the sauce for about 45 minutes. Alternatively, you can bake them and then serve them with the sauce.
